A GUI is nice, but becomes obsolete, once you know the keybindings. I personally disabled all GUI elements of my editor (emacs) because I don’t need them anyway.

Just start using it? Watch some tutorials for the basic keybindings, copy a config from someone else and try to understand what’s going on and from there on you can start building your own config. Theres also a ton of information available on how to do specific things.

If you want your vim keybindings inside emacs you can use evil mode

It is absolutely worth it learning it.

So far my personal favourite is manjaro. I always liked Arch based distros and Manjaro has done a great job at pre configuring everything. Manjaro also came with zsh as the default shell and I really liked that.
